Ingredients:
- 1 cup semi-sweet chocolate chips or 5 squares semi-sweet baking chocolate (dairy free work best)
- 3 1/2 cups icing sugar
- 1/2 cup cocoa powder
- 2 tbsp margarine
- 1/2 cup coconut milk
- 1/2 tsp vanilla extract
- 1 Cup unsweetened coconut flakes, toasted
Preparation:
- Lightly grease an 8 x 8 inch square baking pan.
- Sugar, and cocoa in a large bowl.
- Stir together vanilla, margarine and chocolate in a small saucepan over medium heat. A double-boiler works best.
- Cook the mixture until the margarine has melted, and bubbles just begin to break at the surface.
- Mix in coconut milk and stir until combined evenly
- Remove chocolate mixture from the heat, and combine with sugar/cocoa mixture.
- Mix until it has an even texture and no lumps remain
- Pour everything into your prepared pan.
- Smooth out the top with a spatula and sprinkle with coconut
- Press the coconut gently into the fudge
- Cool completely before cutting into squares.
Makes 32 Small Squares (fudge is extremely rich - you do not want large servings!)
