  • 2 1/4c flour
  • 3/4c sugar (preferably all natural)
  • 2tsp baking powder
  • 1/8tsp salt
  • 1tsp cinnamon
  • 1 1/4c almond milk (or soy milk)
  • 1/3c oil (lighter is better.. canola is very Canadian)
  • 1/2c + 2tbsp soy yogurt
  • 1 1/2tsp maple extract
  • 1/2tsp vanilla
  • real maple syrup/cinnamon/powdered sugar (For topping)
  1. Preheat oven to 350
  2. Grease a muffin pan
  3. Combine dry ingredients
  4. Combine wet ingredients
  5. Combine everything, and mix until just mixed (not too much)
  6. Pour into tray, bake for 18 - 20 minutes, until they pass the 'toothpick test' (it often takes more than 20 in my oven)
  7. Combine some multiple of (1tbsp real maple syrup + 1/2c powdered sugar) as glaze, and sift on powder sugar and cinnamon
