- 2 1/4c flour
- 3/4c sugar (preferably all natural)
- 2tsp baking powder
- 1/8tsp salt
- 1tsp cinnamon
- 1 1/4c almond milk (or soy milk)
- 1/3c oil (lighter is better.. canola is very Canadian)
- 1/2c + 2tbsp soy yogurt
- 1 1/2tsp maple extract
- 1/2tsp vanilla
- real maple syrup/cinnamon/powdered sugar (For topping)
- Preheat oven to 350
- Grease a muffin pan
- Combine dry ingredients
- Combine wet ingredients
- Combine everything, and mix until just mixed (not too much)
- Pour into tray, bake for 18 - 20 minutes, until they pass the 'toothpick test' (it often takes more than 20 in my oven)
- Combine some multiple of (1tbsp real maple syrup + 1/2c powdered sugar) as glaze, and sift on powder sugar and cinnamon
