Five-minute fffffffuuuuuuuuuuuudge

Ingredients:

  • 1 cup semi-sweet chocolate chips or 5 squares semi-sweet baking chocolate (dairy free work best)
  • 3 1/2 cups icing sugar
  • 1/2 cup cocoa powder
  • 2 tbsp margarine
  • 1/2 cup coconut milk
  • 1/2 tsp vanilla extract
  • 1 Cup unsweetened coconut flakes, toasted

Preparation:

  • Lightly grease an 8 x 8 inch square baking pan.
  • Sugar, and cocoa in a large bowl.
  • Stir together vanilla, margarine and chocolate in a small saucepan over medium heat. A double-boiler works best.
  • Cook the mixture until the margarine has melted, and bubbles just begin to break at the surface.
  • Mix in coconut milk and stir until combined evenly
  • Remove chocolate mixture from the heat, and combine with sugar/cocoa mixture.
  • Mix until it has an even texture and no lumps remain
  • Pour everything into your prepared pan.
  • Smooth out the top with a spatula and sprinkle with coconut
  • Press the coconut gently into the fudge
  • Cool completely before cutting into squares.

Makes 32 Small Squares (fudge is extremely rich - you do not want large servings!)
