For the cake, you will need:
- 12 tbsp margarine
- 2 cups sugar
- 1 & 1/2 tspns baking powder
- up to 1/2 cup of your favourite liqueur
- 1 tsp vanilla
- 2 & 3/4 cups flour
- 1/4 cup soy flour
- 1 & 1/2 cups soy plain yogurt
For the icing, you will need:
- 1/2 cup dark chocolate chips melted with 2 tbspns cocoa
- 8 tbsp margarine
- 4 tbsp vegetable shortening
- 3 cups icing sugar
- 3 tbsp soy or rice milk plain
- liqueur as in cake to taste
For the filling, you will need:
- Jam to go with liqueur flavour for spreading between layers
Preparation:
- Prepare cake
- Preheat oven to 350F, grease and flour two cake pans ( 8x 8 or 9x9)
- Cream together margarine, sugar, baking powder and liqueur , vanilla and salt
- Add flours alternately with soy yogurt
- Beat about 5 mins, taste and add more liqueur if needed
- Divide between pans and bake for approx 25 to 35 mins until cake tester comes out clean
- Cover with foil if starting to brown too much
- Prepare icing
