Eat Britney Skewers Alone (Or With Friends) | |

You will need:
- 1 package firm or extra-firm tofu, pressed and chopped into 1" cubes
- 1 small zucchini, chopped into 1" thick clicked / chunks
- 1 green bell pepper, chopped into chunks
- 1 red bell pepper, chopped into chunks
- 1 onion cut into chunks
- 1 cup Italian salad dressing
- Cherry tomatoes and/or button mushrooms (for skewer ends)
- Bamboo skewers
Preparation:
- Toss tofu and vegetables with dressing. Coat evenly and leave to marinate in a bag or bowl overnight.
- Soak bamboo skewers in water for an hour prior to cooking(to prevent them from burning).
- Assemble skewers with alternating layers of tofu and peppers, cap ends with tomomatoes/mushrooms.
- Grill over medium flame for 5-6 minutes, turning once or twice.
- Brush with remaining marinade while cooking and season with salt/pepper as desired.
Serving:
- Serve on skewers with rice or pasta or remove from skewers, chill and use in a pasta salad.
