Ingredients:
- 2 cans pumpkin pie filling
- 1/2 cup agave nectar or light corn syrup
- 1/2 cup sweetened nondairy milk or creamer
- 1/2 tbsp rum
- 1/2 tbsp vanilla extract
- 1 tablespoon sunflower oil
- 2-1/2 cups white flour
- 1 cup sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp nutmeg
- Cupcake liners
- 2x12 cupcake trays
Preparation:
- Preheat Oven to 350 F.
- Place cupcake liners in pan.
- Mix the wet ingredients in a large mixing bowl
- Combine sugar and stir until dissolved
- Stir in the remaining dry ingredients
- Mix until batter has an even consistency and most lumps are gone
- Fill each cupcake liner to about 3/4 of the way up
- Bake for 24 minutes, or until an inserted toothpick comes out clean
- Allow cupcakes to cool before frosting
