Dramatic Chip Cookies (Brownie cookies)

You will need:

  • 13 oz unsweetened chocolate
  • 18 oz semisweet chocolate chips
  • 1/2 cup + 1 tbsp butter or margarine
  • 3 eggs (or equivalent)
  • 1 cup + 2tbsp sugar
  • 1 tbsp instant espresso powder
  • 1 tbsp vanilla extract
  • 6 tbsp white flour
  • 3/4 tsp salt
  • 1/2 tsp baking powder
  • 1 1/2 cups walnuts
  • 1 1/2 cups pecans


Preparation:

  1. In a double boiler melt unsweetened chocolate and 9 oz of semi sweet chocolate and butter
  2. mix eggs and sugar. add espresso, vanilla
  3. add chocolate mix to butter and sugar mix until smooth
  4. add flour, baking powder and salt to mixture until just combined
  5. add remaining choc chip and nuts
  6. chill for 20 mins and preheat oven to 325F
  7. scoop out 1/2 cup amounts of dough and place on ungreased sheet
  8. bake 25 mins or until tops crack
  9. cool on rack
