The Cake Is A Lie

Ingredients:

  • 12 tbspns margarine
  • 2cups sugar
  • 1 1/2 tspns baking powder
  • up to 1/2 cup of your favourite liqueur
  • 1tspn vanilla
  • 2 3/4 cups flour
  • 1/4 soy flour
  • 1 1/2 cups soy plain yogurt

Preparation

  • Preheat oven to 350 degrees, grease and flour two cake pans ( 8x 8 or 9x9)
  • Cream together margarine, sugar, baking powder and liqueur , vanilla and salt
  • Add flours alternately with soy yogurt
  • Beat about 5 mins, taste and add more liqueur if needed
  • Divide between pans and bake for approx 25 to 35 mins until cake tester comes out clean
  • Cover with foil if starting to brown too much

Icing:

  • 1/2 cup dark chocolate chips melted with 2 tbspns cocoa
  • 8 tbspns margarine
  • 4 tbspns vegetable shortening
  • 3 cups icing sugar
  • 3 tbspns soy or rice milk plain
  • liqueur as in cake to taste

Beat all together until light and fluffy

Jam to go with liqueur flavour for spreading between layers.

Cool cake, spread jam on bottom layer, top and ice.
