  • 1 package firm or extra-firm tofu, pressed and chopped into 1" cubes
  • 1 small zucchini, chopped into 1" thick clicked / chunks
  • 1 green bell pepper, chopped into chunks
  • 1 red bell pepper, chopped into chunks
  • 1 onion cut into chunks
  • 1 cup Italian salad dressing
  • Cherry tomatoes and/or button mushrooms (for skewer ends)
  • Bamboo skewers


Preparation

  • Toss tofu and vegetables with dressing. Coat evenly and leave to marinate in a bag or bowl overnight.
  • Soak bamboo skewers in water for an hour prior to cooking(to prevent them from burning).
  • Assemble skewers with alternating layers of tofu and peppers, cap ends with tomomatoes/mushrooms.
  • Grill over medium flame for 5-6 minutes, turning once or twice.
  • Brush with remaining marinade while cooking and season with salt/pepper as desired.


Serving:

  • Serve on skewers with rice or pasta or remove from skewers, chill and use in a pasta salad.
